Description : CMM is well established agricultural business in the Stara Zagora, Bulgaria region. The company was founded in 1997 with a focus on the production and trade of agricultural products and related services.
Presently the company tends around 600 hectares (1500 acres) of irrigated land in the environs of Oryahovitsa (19 km east of Stara Zagora). The area is part of one of the most fertile regions of the Thracian valley, allowing for the cultivation of a range of high quality, internationally known fruit varieties and base annual crops. The company also owns 50 hectares (125 acres) of wine producing vineyards, 5 hectares (13 acres) of cherry orchards, as well a number of plots growing wheat, barley, corn, sunflower and other popular annual crops.
In 2008 CMM successfully completed a SAPARD project, creating 10 hectares (30 acres) plums and 5 hectares (13 acres) cherry orchards, as well as 15 hectares (37 acres) table grapes vineyards. The company is presently in the process of gaining a certification for ecologically clean (organic/bio) products for the SAPARD project crops.

Description : Soybeans are an important global crop, providing oil and protein. The bulk of the crop is solvent-extracted for vegetable oil and then defatted soy meal is used for animal feed. A small proportion of the crop is consumed directly by humans. Soybean products do appear in a large variety of processed foods. The oil and protein content together account for about 60% of dry soybeans by weight; protein at 40% and oil at 20%. The remainder consists of 35% carbohydrate and about 5% ash. Soybean cultivars comprise approximately 8% seed coat or hull, 90% cotyledons and 2% hypocotyl axis or germ. The majority of soy protein is a relatively heat-stable storage protein. This heat stability enables soy food products requiring high temperature cooking, such as tofu, soymilk and textured vegetable protein (soy flour) to be made.
